When Grandmommy needed to eat more whole wheat, Grandfather took his traditional recipe and created this in 2022.
Ingredients:
2 sticks of butter
1/2 cup of firmly packed Splenda Brown Sugar (or one cup of regular brown sugar)
1/8 cup of Stevia sweetener (or 1/2 cup of granulated sugar)
2 eggs
1 teaspoon vanilla
1/2 cup of all-purpose flour PLUS 2/3 cup
1/3 cup of whole whet flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt (optional)
3 cups of uncooked oatmeal
1. Heat oven to 350 degrees F
2. Beat together butter and sugars until creamy. I usually soften the butter a bit.
3. Add eggs and vanilla and beat well.
4. In a separate bowl, add combined all of the all-purpose flour, the 1/3 cup of whole wheat flour, 1 teaspoon baking soda, 1 teaspoon cinnamon and 1/2 teaspoon of salt, mix well.
5. Add the flour mix to the eggs, butter, etc mix.
5. Stir in 3 cups of oats, mix well.
6. Drop by rounded tablespoonfuls onto ungreased cookie sheet.
7. Bake 10 to 12 minutes until golden brown.
8. Cool 1 minute on cookie sheet; remove to wire rack. Makes about a dozen cookies.
