Grandfather Maynard's Honey Whole Wheat Bread
 
3 to 5 cups bread flour, divided
1 cup whole wheat flour
2 packages of .25 ounce active dry yeast
2 teaspoons kosher salt
1 cup water
1 cup whole milk
½ cup unsalted butter
1/3 cup honey
1 large egg
1 large egg white, lightly beaten
 
 
DIRECTIONS
1. Add to a large bowl and mix well: 3 cups bread flour, 1 cup whole wheat flour, 2 packets of yeast, and 2 teaspoons of kosher salt

2. In a small saucepan, mix the following together: 1 cup water, 1 cup whole milk, ½ cup unsalted butter, 1/3 cup honey

3. Let the saucepan heat until the butter has melted (should be 120-130 degrees F)

4. Add the contents of the saucepan to the contents of the bowl.

5. Mix at low speed.

6. Beat one egg and add to the bowl and continue to mix.

7. Add flour as needed, sometimes as little as 1/3 cup of bread flour.

8. Remove the dough and place on a lightly floured surface and knead until smooth.

9. Lightly spray a large bowl with cooking spray or Baker’s Joy.

10. Place dough in the bowl.

11. Turn the dough over so that the ball of dough has some oil covering the entire ball.

12. Cover and let rise in a warm place.

13. Let rise for one hour. Should double in size.

14. Spray 2 9x5 bread pans with cooking oil or Baker’s Joy.

15. Remove the dough from the bowl and place it on a lightly floured surface and shape it into two loaves and place into the bread pans. Cover and let rise for one hour.

16. Preheat oven to 350 degrees F.

17. Uncover loaves, brush tops with egg white.

18. Bake until golden brown, 25 to 35 minutes.

19. Let cool in pans for 10 minutes.

20. Remove from pans and let cool completely.
