 BETTER THAN FRENCH FRIES OVEN COOKED TATERS

INGREDIENTS

2 pounds of potatoes

1 1/4 teaspoon salt

1/4 teaspoon baking soda

2 tablespoons of olive oil

1/4 teaspoon of pepper


1. Preheat oven to 450 F.

2. Set pot to boil, adding 1 1/4 teaspoon salt and 1/4 baking soda to the water.  

3.Peel potatoes.

4. Cube into 1 inch cubes.

5. Parboil the potatoes for 6 minutes. Parboiling along with the baking soda will break down the starch.

6. After 6 minutes, drain potatoes, but allow them to sit in the pan to allow them to steam.

7.  Toss with olive oil.

8. Spread onto the baking pan that has been lined with parchment paper. Be sure to give each cube space.

9. Cook at 425 F for 20 minutes, turn and cook an additional 20 minutes or until done.

10. Serve immediately.
