Elder Hester's Honey Cornbread - Maynard Pittendreigh

ELDER HESTER'S HOLY HONEY CORNBREAD

This recipe comes from one of the members of the Calhoun Falls Presbyterian Church in Calhoun Falls, SC.  Jim Hester was an elder of the church and a veteran of World War II.  He always brought this to congregational dinners and said that it was his grandmother's recipe from the days of the Civil War.  

INGREDIENTS

1 cup of all-purpose flour
1 cup yellow cornmeal
1/4 cup of sugar
1 tablespoon baking powder
1 cup heavy cream
1/4 cup vegetable oil
1/4 cup honey
2 eggs, lightly beaten


DIRECTIONS

1. Preheat oven to 400 degrees F.

2. Lightly grease an iron skillet, or a 9x9 baking pan.

3.  In a large bowl, stirl together flour, cornmeal, baking powder and sugar.

4.  Make a well or a dip in the center of the dry ingredients.

5.  In that well, add the cream, oil, eggs and honey. Stir to combine all incredients.

6. Pour batter into the skillet or pan.

7. Bake in the preheated oven for 20 to 25 minutes.

8.  Do the toothpick test by inserting into the center of the bread and pulling it out.  If it is clean, it's done.
