MAYNARD'S FAVORITE CRISPY OVEN CHICKEN TENDERS

Maynard found this recipe during the Pandemic of 2020, when he was desperate for new recipes.

 

Ingredients

Breadcrumbs


  • 1 ½ cups panko breadcrumbs
  • Oil spray

Batter


  • 1 egg
  • 1 tablespoon flour
  • 2 tablespoon mayonnaise
  • 1/2 tsp salt
  • Black pepper

Chicken

2 chicken breasts, boneless, cut in strips

Instructions

1.                 Preheat oven to 390F.
2.                 Spread panko on a baking tray, spray with oil (spray downward in order to avoid blowing the panko off the tray), then bake for 3 to 5 minutes until a nice light golden color.
3.                 Transfer baked panko crumbs to a bowl.
4.                 Place a rack on a baking tray (not required but it will bake the chicken more evenly).
5.                 Combine the batter ingredients in a bowl and whisk with a fork until combined.
6.                 Add the chicken into the Batter and toss to coat.
7.                 Pick up the chicken with tongs and place it into the panko bowl.
8.                 Sprinkle surface with breadcrumbs, then press down to adhere.
9.                 Transfer onto a baking tray.
10.            Spray lightly with oil, sprinkle with a touch of salt (optional). Bake 15 minutes (medium).
11.            Remove from oven and sprinkled with fresh parsley, if desired. Serve ‘em and eat ‘em.
