RICE - Alberta's Grandmother's Rice

Alberta says that rice was not eaten as frequently in the Upstate South Carolina where she grew up as it is in the Low Country around Florence where she now lives. "We had rice for Sunday dinner, on Thanksgiving, Christmas and on birthdays."

To a pot of boiling water add one cup of white rice.

Stir with fork, never a spoon, only once.

Reduce heat, cover and boil 18-20 minutes, no longer.

Drain in colander and rince with cold water.

Rice grains will be separate, not sticky.

Keep warm by placing colander over pot of steaming water.

Serve with fried chicken and brown gravy.

Serve with a fork, never a spoon. Spoons should never touch rice (only Alberta knows why).
