OMELET - Daddy Bill's Red Top Spanish Omelet

Members of the family who lived in Ware Shoals, SC, during the 1950's remember the Red Top Restaurant. Bill Pittendreigh says, "When Earline would take the children to Rock Hill to visit Dad and Mam Shannon, I would have breakfast at Tom Clamp's Red Top Restaurant. I tried for several years to entice Tom to give me his recipe. When he closed his restaurant he finally gave it to me."

3 eggs

1/4 cup sliced mushrooms

2 slices of bacon, cooked and crumbled

1 small tomato, diced

3 tablespoons chopped onion

Mix all ingredients and slowly cook in fry pan.

When almost done, fold into omelet.
