BREAKFAST CASSEROLE - The Comer's Breakfast Casserole

When Mary Leslie Comer sent the recipes on behalf of her and her parents, Gordon and Mary Jane Comer, she remembered that at every Christmas morning in her childhood, she, Carrie and Blake would always anticipate Santa's arrival. "It was usually around 6:30 or 7:00 a.m., when we could get up and begin our family traditions of December 25. We would begin by waiting at the end of the hall or the top of the steps for Dad to give us the okay to come down to see what Santa had left for us. From there we would open all of our gifts in an orderly fashion - by going around the circle, each person opening one gift at a time. By 10:00 AM, we would finally realize that we were all hungry. As we would sit down and thank God for the way that He has blessed us over and over again, we would enjoy the tradition of Breakfast Casserole.

4 eggs, beaten

3/4 cup milk

1/4 tsp salt

1/8 tsp pepper

1 pound bulk sausage

1 8-ounce can crescent rolls

2 cups shredded mozzarella cheese

Crumble sausage in pan and cook until brown. Drain well. Line the bottom of a 15"x9"x2" baking dish with unrolled crescent rolls. Press perforations to seal crust. Sprinkle with sausage. Combine eggs, milk, salt and pepper and pour over sausage. Top with cheese and bake 20 minutes at 425 degrees or until casserole is set. Let set for 5 minutes. Cut into blocks and serve.
