MAYNARD'S TRADITIONAL OATMEAL COOKIE

MAYNARD'S TRADITIONAL OATMEAL COOKIE - Maynard Pittendreigh

 

These are Ginny Pittendreigh's favorite.  This is a traditional recipe for oatmeal cookies - it makes a LOT of cookies! 

You can also use this recipe for Apple Pie Cookies.

 Ingredients:

2 sticks of butter 

1/2 cup of firmly packed Splenda Brown Sugar (or one cup of regular brown sugar) 

1/8 cup of Stevia sweetener or 1/2 cup of granulated sugar 

2 eggs 1 teaspoon vanilla 

1 1/2 cups of all-purpose flour 

1 teaspoon baking soda 

1 teaspoon cinnamon 

1/2 teaspoon salt (optional) 

3 cups of uncooked oatmeal 

1. Heat oven to 350 degrees F 

2. Beat together butter and sugars until creamy. I usually soften the butter a bit.

3. Add eggs and vanilla and beat well. 

4. Add combined flour, baking soda, cinnamon and salt, mix well. 

5. Stir in oats and raisins, mix well. 

6. Drop by rounded tablespoonfuls onto ungreased cookie sheet. 

7. Bake 10 to 12 minutes until golden brown. 

8. Cool 1 minute on cookie sheet; remove to wire rack. Makes about a dozen cookies.
