EGGS BENEDICT

Mac says that he and his wife Cathy and his mother Helen first had Eggs Benedict with Bill and Hazel Pittendreigh in Gatlinburg, Tennessee. They were

there for the Gatlinburg Scottish Games and had Sunday breakfast at the "Burning Bush Restaurant." M

1 poached egg per serving

1 slice of Canadian bacon or country ham per serving

1 toasted English muffin, buttered, per serving

Hollandaise sauce

Mac uses use Known Brand, mix according to conventional directions, however ---

· use butter instead of margarine,

· use 1 cup of condensed milk instead of whole milk,

· and use the whole lemon instead of 1 tablespoon (gives a little more zest).

Place cooked Canadian bacon or ham on buttered English muffin, top with poached egg, spoon over Hollandaise sauce as desired. And according to Mac, "Watch out cholesterol."
