Mac says that if his recipe for Huevos Rancheros didn't flip your sombrero try Huevos con Chorrizo (eggs and Mexican sausage for those who are illiterate in Espanol.
Chorrizo can be found in many supermarkets, such as
Food Lion or Winn-Dixie. Where they might have a large Mexican Community, there is usually a Mexican specialty store.
1 link of Chorrizo
2 eggs beaten
Fry Chorrizo in skillet on medium heat, break up the link as you fry, reduce heat if it starts to stick.
Cook until done. Drain all but a small amount of excess grease.
Stir in beaten eggs.
Continue to cook and stir until eggs are done.
Serve with warm corn tortillas and butter.
