CREAMED BEEF ON TOAST

This became a favorite of Mac when he was serving in the U.S. Air Force. Family members with military experience will also know it by another name that can't be printed in this book. Mac suggests that a serving of this will make you want to re-enlist!

1/4 pound dried beef

1/4 cup of butter or margarine

3 tablespoon flour

2 cups milk (1 cup evaporated milk, 1 cup water)

With fingers tear beef in medium size pieces. If too salty, rinse with water. Drain well. Melt butter in skillet, watching closely so as not to burn. Add dried beef, cook and stir until edges curl. Add flour, stir until blended. Add milk, slowly stirring. Cook until smooth and thickened.

Serve over toast or biscuits, with or without eggs.
