CHICKEN - Mac's Chicken with Chipped Beef

Mac is a long time Boy Scouter. He got this recipe from the newsletter "Tsoiotsk Tsogalii" of Lodge #70, Order of the Arrow, BSA. They publish a recipe each month. Mac found this to be a good one. It is for 8 boys, using a dutch oven to cook with, but it is easily adaptable to the home oven by using a covered casserole dish. Also, you don't have to use eight chicken breasts unless you need eight servings.

Spray the bottom of your dutch oven or casserole dish with Pam.

Place 4 chicken breasts in the bottom of your oven or casserole dish.

Spoon on 1/2 can of cream of mushroom soup along with a 1/2 carton of sour cream and cover with 1/2 jar of chip beef, torn into small pieces.

Place 4 more chicken breast on top of this cover with the remaining soup, sour cream and chip beef. Salt and pepper to taste. Top with sliced onions.

Cover and cook slowly for about two hours. Check often to avoid sticking.

Serve over wild rice.
