CANDIED SWEET POTATOES - Alberta's Charleston Sweet Potato

You have to love the part of the recipe that says "some cinammon."

  • 3 large sweet potatoes
  • 1 cup brown sugar
  • 6 pieces orange peel
  • 1/2 cup water
  • 4 tablespoons butter
  • Some cinnamon

  1. Boil whole potatoes until tender.
  2. Take off skin and slice thin.
  3. Put a layer of potatoes in buttered pyrex dish sprinkled with sugar and cinnamon and butter;
  4. When dish is filled sprinkle top layer of potatoes with sugar, butter, cinnamon, and orange peel.
  5. Add water and bake until brown and well candied -- about 30 minutes at 350 degrees. serves 4.
