- 3 large sweet potatoes
- 2tablespoons of butter
- 1/2 teaspoon cinnamon
- 1/2 cup sugar
- 1/2 teaspoon nutmeg
- 1 egg
- 2 egg whites
- 4 teaspoon sugar
- Boil potatoes until soft. peel and mash well with 2 tablspoons of butter.
- Add sugar, cinnamon,nutmeg, and egg, well beaten.
- Fill cooked pastry shell and cover with meringue made of beaten egg whites and 4 teaspoons of sugar.
- Brown in medium oven. serves 6.
