CAKE ICING - Bill's Caramel Frosting Stolen From Beulah Abbott

J.J. Abbott operated the "Big Friendly" which was the company store in Ware Shoals, SC when Riegal Textile was in operation. J.J. Abbott's wife, Beulah, would prepare a cake when any of the top brass was sick or a member of his family was sick. Beulah's cake was a plain cake covered with this frosting. After J.J. passed away, Beulah continued to provide her cakes with this frosting to anyone in town who was sick.
4 cup sugar
1 1/4 cup of milk
1 stick of butter


Put 1 cup of sugar in a heavy iron frying skillet and brown. Do not have pan too hot. Stir constantly.
Mix milk with the remaining sugar in a sauce pan. Let boil. Remove from burner and slowly add the brown sugar.
Return to burner and add butter.
Cook until it forms a tadpole when dropped in cold water.

Place mixture immediately in another pan (do not scrape). Cool by placing in a pan of cold water. Beat until it is spreading consistency.
