CAKE - Helen's Red Velvet Cake

1/2 cup shorting

1 1/2 cups sugar

2 whole eggs

2 ounce red food coloring

1 level tablespoons coca

1 teaspoon soda

1 teaspoon vinegar

1 scant teaspoon salt

2 1/2 cups cake flour

1 cup buttermilk

2 tablespoons vanilla

Cream shorting and sugar, add eggs. Cream until well blended. Mix food coloring and coca and add to cream mixture. Sift dry ingredients together. Add dry ingredients and liquid alteratively. "Fold do not

beat" add vinegar and salt last. Bake in three 9" cake pans at 350 degrees for 25 minutes.

Icings

1/2 cup flour

1 1/2 cup water

2 sticks margarine

1 stick butter

1 1/2 cup XXXX Sugar

1 teaspoon vanilla

Cook flour and water until clear, cool for two hours, cream butter sugar and vanilla. Add in cool flour mixture. Beat with electric beater until light fluffy (about 20 min). Spread on cake
