While his wife, Ginny, enjoyed boiled peanuts as a child, Maynard grew up with parched peanuts. After he married Ginny, Maynard wanted some parched, or roasted, peanuts. He called his sister Shannon who said she and their mother always cooked them at 350 degrees F. Maynard found this often allowed the peanuts to cook just a wee bit too long, or to even burn slightly. After experimenting, he came up with this method.
1. Get enough dry peanuts to cover your baking tray with two layers. Dry peanuts should be available year-round, unlike green peanuts that are fresh from the ground.
2. Put peanuts onto the tray and place in a cold oven.
3. Turn the oven heat to 250 F.
4. Roast for 40 minutes and check. They should be just a wee bit short of being cooked.
5. Leave the peanuts in the oven and let the oven cool.
6. Allow the peanuts to rest for 1 hour.
