Pandemic Biscuits for Two

The problem with most biscuit recipes is that when there are only two in the home, you are left with too many leftovers.  Reita, the sister of one of my best friends from high school, John Hartline, shared this with me in 2020 during the Pandemic.  It came in handy at a time when we were under Stay at Home orders by the county and could not waste even a little of the flour in the house.

Ingredients:
·        1 cup All Purpose flour
·        1 teaspoon sugar
·        1 1/2 teaspoon baking powder
·        1/4 teaspoon salt
·        3 tablespoons cold, regular, salted butter  
·        A little less than 1/2 cup of whole milk

Directions:
1.     Mix all dry ingredients together in a bowl.
2.     Dice up the butter and distribute into the flour mix.
3.     Using your hands, squeeze and mix the butter into the flour mix.
4.     Add the milk and stir, being careful not to over handle the dough.
5.     Place dough on wax paper and roll out. 
6.     Fold over and roll out.  Repeat.
7.     Cut into four biscuits.
8.     Bake at 425 F for 10 to 12 minutes or until golden brown.
