GRANDY’S
BATTERED FRENCH FRIES
There
was a Grandy’s Chicken restaurant near my church in Brunswick, Georgia. One of the best things was their battered French
Fries. I never got their recipe, but
this recipe was inspired by them. I
think they come close.
INGREDIENTS
2 1/2 pounds of peeled russet potatoes
2 1/2 pounds of peeled russet potatoes
1
cup of all-purpose flour
1
teaspoon garlic salt
1
teaspoon onion salt
1
teaspoon paprika
½
cup of water, or as needed
1
cup vegetable oil for frying

Slice
potatoes into French fries

Place
the sliced potatoes into cold water.
This will keep them from turning brown while you prepare the oil.
3.
Heat
oil in a large skillet over medium-high heat.
4.
Sift
the flour, garlic salt, onion salt and paprika into a large bowl. Gradually
stir in enough water so that the mixture can be drizzled from a spoon.
5.
Dip
potato slices into the batter one at a time, and place in the hot oil so they
are not touching at first. If the fries are not placed in the oil one at a
time, they will clump together.
6.
Fry
until golden brown and crispy.
7.
Remove
and drain on paper towels.
