She Crab Soup from the Sea Captain's House Myrtle Beach SC

Here is the recipe for She Crab Soup that I got from the waiter at the Sea Captain's House in Myrtle beach. It makes a gallon, so one should probably figure out a reduced version. I think this is probably the best I've had in years.
 
The recipe makes 1 gallon, so it needs to be reduced!

2 large onions, diced
1 cup clarified butter
2 cups all-purpose flour
2 and 1/3 quarts half and half
1 quart heavy cream
1 and 1/2 teaspoons ground mace
1 cup good sherry
1 pound fresh white crabmeat (must be good quality)
salt and pepper to taste

1. In large stockpot, cook onions in butter until soft.
2. Add flour, reduce heat to low, stirring constantly for 15 minutes.
3. Add milk products and continue stirring.
4. Add remaining ingredients and simmer for 30 minutes, stirring frequently.

Add a bit of sherry when serving.

I would also add a dash of paprika on top as well, as it adds a bit of flavor and makes for a nice presentation.

Makes 1 gallon.
