Cheez-It Chicken

Cheez-It Chicken

4 skinless boneless chicken breasts
Salt and pepper to taste
1/4 cup sour cream
1/4 cup buttermilk
1 1/2 cups Cheez-Its, crushed in a baggie or using a food processor

1.  Preheat the oven to 325 degrees.
2.  Grease an oven-safe dish that the chicken will fit in.
3.  Pat them dry with a paper towel.
4.  Season on both sides with salt and pepper, as desired.
5.  In a shallow dish, combine the sour cream and buttermilk.
6.  Arrange the crushed Cheez-Its in a second shallow dish.
7.  Dip each chicken breast into the sour cream mixture., then the Cheez-Its so that the crushed crackers adhere to the chicken and form a crust.
8.  Place the chicken in the baking dish, leaving about an inch between the breasts.
9.  Cover with foil and bake for 45 minutes.
10. After 45 minutes, remove the foil and continue to bake for an additional 15 minutes.
