Perfect Steak - Backwards

This oven cooked steak is the BEST recipe for steak.  Many cook it in the oven and sear it first, then cook it, and let it rest.

This recipe turns it around.

1.  Take steak out of fridge and let it get to room temperature.

2.  Preheat oven to 275 - yes, that low!  We want to cook it evenly without searing it.  Let it cook for 30 minutes to an hour, depending on the size.

3.  When the internal temp is 125, remove the steak.

4.  Let it rest for 15 minutes, allowing the internal temp to continue cooking.

5.  Sear the meat on both sides.

Serve - no need to rest as it has already gone through that process.
