SEAFOOD - Maynard's Cedric Fish and Chips

This recipe is based on Cedric's Fish and Chips, a restaurant where Maynard worked while in college. This batter is also used to make Onion Rings.

3 cups soybean oil

Frozen cod fillets

1 1/3 cups self-rising flour

1 cup water

1 egg

2 teaspoons granulated sugar

2 teaspoons salt

1. Take the frozen fish fillets, and cut length-wise, with the blade at an angle. Let thaw.

2. When ready, heat oil in a deep fry to 400 degrees.

3. Blend the flour, water, egg, sugar and salt.

4. Dip each fillet into the batter.

5. Cook the fillets, about 5 minutes each.

6. After the fish has cooked, dip your fingers into the left over batter and then shake the batter into the oil. This fried batter will help garnish your plate.
