ROAST PORK - Helen's Herbed Pork Roast

Here is a recipe from "Southern Living Party Cookbook" which has been used by Helen Robertson and her children Mac and Sylvia as a very favorite roast!

1 4-6 lb. lion of pork

2 1/2 teaspoon salt

1 teaspoon pepper

1 teaspoon thyme

1/2 teaspoon ground nutmeg

Combine all seasoning and rub into meat. Place in 450 degree oven and roast uncovered 30 minutes. Reduce heat to 350 degrees and add the following.

2 carrots cut in small pieces

2 onions coarsely chopped

2 large cloves garlic minced

4 whole cloves

fine chopped celery leaves

2 sprigs of parsley

3 bay leaves

1 10 oz chicken consomme

Cover and bake 3 hours or until meat is tender, basting often. Before serving transfer meat to heated . Skim fat from gravy, put pan juices in blender, removing cloves and bay leaf. Serve in gravy boat with meat. Yields 8-10 servings.
