PIG PICKING CAKE

Maynard Pittendreigh

During the first few months I was at Good Shepherd Presbyterian Church, we had a series of dinners with small groups, so that Ginny and I could get to know the members. Dodie fixed this wonderful cake, which was named “Pig Picking Cake.” I asked her why it had that name, and she said no one knew.

  • 1 box of Duncan Hines Cake mix, butter recipe.
  • 1 – 11 ounce can of mandarin orange. Do not drain.
  • 4 eggs
  • ¼ cup of Crisco oil
  • mix all together for 2 minutes
  • cook at 350 for 25 minutes.

Icing:

  • 8 ounces Cool Whip
  • 1 box of 3 ounce Vanilla Instant Pudding mix.
  • 1 can of 8 ounce crushed pineapple. Don’t drain.
