HOE CAKES - Alberta's Hoe Cakes

Hoe cakes were made from a corn meal dough that was carried with the folks when they went to work in the field. At lunchtime they cleaned their hoes, put the dough on them, and cooked the hoe cakes over a hot fire.

1 cup corn meal

boiling water

4 tablespoons flour

1 tablespoon bacon grease

2/3 teaspoon salt

1 cup milk

3 teaspoons baking powder

Pour enough boiling water over meal to cover it. Let stand for about 5 minutes. Add flour, salt, and baking powder. Stir. Add milk, increasing amount slightly if thinner batter is desired. Stir in bacon grease. Cook by spoonsful in lightly greased iron skillet.
