FRIED CHICKEN - Maynard's spicy fried chicken

Maynard Pittendreigh

6 cups cooking oil
2/3 cup all-purpose flour
1 tablespoon salt
2 tablespoons pepper
1 teaspoon cayenne pepper
2 teaspoons paprika
3 eggs
1 chicken cut up

1. Heat the oil in a deep fryer.
2. In a large bowl, combine the flour, salt, peppers and paprika
3. In a separate bowl, beat the eggs until blended
4. Dip each piece of chicken into the eggs, then coat generously with flour mixture.
5. Drop each piece into the oil and fry for 15 to 20 minutes, or until done.
6. Remove chicken and drain.
