FRIED CHICKEN - Maynard's Cedric's Chicken

While in college, Maynard worked at a seafood restaurant, Cedric's Fish and Chips. The chicken recipe was simple and easy.


Salt

2 cups flour

2 tablespoons pepper

chicken


The chicken pieces need to be placed in a large bowl of water and salt. Put the bowl in the refrigerator over night.

1. Combine in a bowl the flour and pepper.

2. Cut chicken into separate parts (leg, thigh, etc).

3. Rinse chicken thoroughly.

4. Dip chicken into flour and pepper.

5. Cook in oil at 400 degrees for 12 minutes.
