The secret of good fried chicken is using an iron skillet. Unfortunately, a lot of modern smooth top stoves don't permit using this kind of cookware. That really is a moot point, however, since there is something about this recipe, however, that can't be duplicated outside of the Enzor kitchen. Alberta also started with a whole chicken and cut it so that there was a wishbone piece.
1. Cut chicken into parts.
2. Wash chicken in water.
3. Preheat oil, using about an inch depth in the skillet.
4. Cover chicken with flour. Place in hot oil.
5. Pepper the chicken while it is cooking in the oil.
