CASSEROLE - Comer Family's Squash Casserole

When Mary Leslie Comer sent the recipes on behalf of her and her parents, Gordon and Mary Jane Comer, she remembered that this squash casserole has been a dish that frequents her grandmother Florence's table. She confessed, "perhaps it was because it was one of the only ways some of us children would eat vegetables."

2 pounds squash

1 or 2 onions

1 can cream of chicken soup

8 ounce sour cream

1 stick of margarine melted

8 ounce package Pepperidge Farm Herb Stuffing

Boil 2 pounds cooked squash and 1 or 2 onions. Chop up and add cream of chicken and sour cream. Melt margarine in saucepan. Add stuffing and saute, until covered with melted margarine. Layer stuffing and squash in casserole dish, starting with stuffing. Bake for 30-45 minutes at 350 degrees.
