Cressie Elizabeth Maynard Pittendreigh
This is a recipe that Mac Robertson remembered very well, and after searching for it for this book, was able to find it with the help of his mother Helen.
1 cup of butter
2 cups sugar
3 cups sifted flour
4 eggs
3 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 teaspoon vanilla extract
Cream butter and sugar until light, add beaten eggs one at a time,
beating thoroughly. Sift and add dry ingredients alternately with milk
and flavoring. Bake in grease loaf pan in moderate oven 350-375 degrees.
45-60 minutes; or bake in two greased layer cake pans in moderately hot
oven 375 degrees about 25 minutes.
Fill and frost as desired.
Grandma always used a white icing.
