Rabbit - Fried

“Br’er Rabbit is common game. When young and tender, rabbit may be fried like chicken," says the note on Alberta's recipe card.

Cut up and soak in salt water for 1 hour.

Put sale and pepper into a portion of the flour and roll the rabbit parts in the flour as you would a chicken.

Fry in plenty of hot fat.
