PANKO CHICKEN FINGERS

2 chicken breasts, cut into finger sections

2 eggs

2 cups panko

  1. Preheat the oven to 300 degrees F.
  2. Set a rack on a baking sheet and mist with cooking spray.
  3. Whisk the eggs in a shallow bowl.
  4. Place the panko mix in another bowl.
  5. Dip the chicken strips in the egg mixture, letting the excess drip off, then coat with the panko.
  6. Bake until golden brown and cooked through, about 20 minutes.
