YEAST ROLLS


1 cup boiling water

¼ cup shortening

¼ cup butter

1/3 cup sugar or Splenda

1 package of yeast

1 egg, beaten

1 teaspoon salt

3 2/3 cups flour

  1. In a bowl, pour boiling water over the shortening and the ¼ cup butter.
  2. When the butter and shortening have melted, stir in the sugar
  3. Cool to lukewarm (about 105 degrees F)
  4. Slowly add the flour into the liquid, about a half cup at a time, adding enough to make a soft dough.
  5. Shape the dough into a ball and cover the bowl with a cloth.
  6. Wait about an hour, until the dough has doubled in size.
  7. Punch down the dough and form it into round rools each about the size of a golf ball or slightly larger.
  8. Place the rolls on a lightly greased baking pan, and let them rise again for about a half hour (they should double in size again, so leave plenty of room between each).
  9. Preheat the oven to 350 degrees F.
  10. Bake the rolls for about 10 minutes or until lightly brown.
  11. Removed and, if desired, brush with melted butter.

Makes about 2 dozen rolls
