SWEET POTATO CHIPS

2 tablespoons of olive oil

1 pound sweet potatoes

Salt

  1. Preheat oven to 500 degrees F.
  2. Lightly brush baking sheets with olive oil.
  3. Arrange the sweet potato slices in a single layer on the sheets and drizzle with the remaining olive oil.
  4. Bake until golden and crisp, about 10 minutes.
  5. Turn the slices, rotate the pan/sheets, and cook on second side for about 10 minutes longer.
  6. Transfer to paper towels and drain.
  7. Season with salt, let stand for 5 minutes, eat.
