2 tablespoons of olive oil
1 pound sweet potatoes

- Preheat oven to 500 degrees F.
- Lightly brush baking sheets with olive oil.
- Arrange the sweet potato slices in a single layer on the sheets and drizzle with the remaining olive oil.
- Bake until golden and crisp, about 10 minutes.
- Turn the slices, rotate the pan/sheets, and cook on second side for about 10 minutes longer.
- Transfer to paper towels and drain.
- Season with salt, let stand for 5 minutes, eat.
