ANGEL BISCUITS - lower calorie

This is similar to my Mom's Angel biscuits, but with about half the calories. The main difference is the absence of shortening. A possibility I've never tried is to replace the shortening in Mom's recipe with applesauce - a common low calorie substitute for shortening.

½ cup warm water, 105 to 115 degree F

1 package active dry yeast, about 2 ¼ teaspoon

5 cups all-purpose flour, plus more for rolling

¼ cup sugar or splenda

1 ¼ teaspoons salt

1 teaspoon baking powder

1 teaspoon baking soda

½ cup or one stick unsalted butter, chilled, cut into ¼ inch pieces

2 cups buttermilk

  1. Place warm water in small bowl. Sprinkle the yeast over the water to dissolve and set aside for 5 minutes.
  2. Combine the flour, sugar, salt, baking powder, and baking soda in a large bowl.
  3. Cut in the butter until the mix resembles course meal.
  4. Add the yeast mixture and buttermilk and stir until just moist.
  5. Cover and refrigerate for 1 hour or overnight.

When ready, roll into biscuits by hand. Preheat the oven to 375 degree F and cook for 10 to 15 minutes.
