BLACKBERRY COBBLER

 Blackberry Cobbler - Maynard Pittendreigh


 

INGREDIENTS

1 1/4 cups fresh or frozen (thawed and drained) blackberries 
1/2 cup sugar or 1/8 cup Stevia
1/2 cup all-purpose flour
1 teaspoon baking powder 
1/4 teaspoon of nutmeg 
1/4 teaspoon salt
1/2 cup milk
1/4 cup butter, melted
Cream, whipped cream or ice cream, if desired, to add when serving

DIRECTIONS

1. In medium bowl, stir together blackberries and sugar. Let stand about 20 minutes or until fruit syrup forms. Heat oven to 375°F.

2. In large bowl, stir together flour, baking powder, nutmeg, salt and milk. 

3. Stir in melted butter until blended. Spread in small 4 inch square pan. (Some will say not to grease the pan, but I use Bakers' Joy.

4. Spoon blackberry mixture over batter.

5. Bake 45 to 55 minutes or until dough rises and is golden. Serve warm with cream. 

 

A basic cobbler dough, which is like a drop biscuit, should be mixed with a light hand so it will rise up through the berry mixture and have a light texture. Mix just until the dry ingredients are moistened.
