FREE BREAD

This bread
was used in the Grace Covenant Presbyterian Church in Orlando. When we need to offer a gluten-free choice, I
directed the folks who prepared the Communion elements to make all of the bread
gluten-free so as to avoid any cross-contamination. For many, gluten-free food was a choice, but
for some it was a health necessity which required a strict adherence. I always found this to be tasty. This does need a bread machine with a gluten-free
setting, but one might adapt it for regular ovens.
INGREDIENTS

½ cups of warm water, between 80 and 90 degrees Fahrenheit.

large eggs, room temperature

cup oil
·

teaspoon cider vinegar
·
2
cups flour
·
1
½ teaspoon salt
·
½
cup potato starch
·
½
cup tapioca flour
·
1/3
cup cornstarch
·
3
tablespoon sugar
·
1
tablespoon xanthan gum
·
2
¼ teaspoon of bread yeast
INSTRUCTIONS
1. Place the ingredients into the bread pan of a
bread machine in the order they are listed above.
2. Turn on the machine using the Gluten
Free setting and let it do the work.
