Amish Cinnamon Bread

 Amish Cinnamon Bread is something that Maynard Pittendreigh made for family and friends.  It is easy.  No kneading.  No rising.  Just mix, bake, eat, repeat.


Ingredients:

1 cup of butter, softened
2 cups sugar for the batter
2/3 cups of sugar for the topping
2 eggs
2 cups buttermilk, or 2 cups milk with 2 tablespoons of either vinegar or lemon juice
4 cups flour
2 teaspoons baking soda
2 teaspoons cinnamon


Directions:

1. Cream the 1 cup of softened butter, the 2 cups sugar and the eggs

2. Add milk, flour and baking soda

3. Put the mixture in a loaf pan so that the pan is about 1/4 full of the batter.

4. In a separate bowl, mix the 2/3 cup sugar and the cinnamon.   Put about 3/4 of this mixture on top of the batter in the loaf pan.

5. Add the rest of the batter in the loaf pan.

6. Add the rest of the cinnamon mix to the top of the batter.

7. Swirl with knife. 

8. Bake in oven at 350 degrees for 45 to 50 minutes.
