1/3 cup fat-free half and half
1 tablespoon firmly packed brown sugar
1 teaspoon light tub margarine
1 teaspoon vanilla extract
3 ½ cups water
2 cups uncooked rolled oats
2 medium sweet apples, such as fuji or gala cut into ½ inch pieces about 2 cups
1/3 cups raisons – optional
2 teaspoons apple pie spice
¼ teaspoon ground cinnamon optional
- In a small bowl, stir together the half and half, brown sugar, margarine and vanilla.
- Cover with plastic wrap and refrigerate overnight until serving time.
- Lightly spray to a 3 to 4 quart slow cooker with cooking spray.
- Put the remaining ingredients except the cinnamon in the slow cooker, stirring well to combine.
- Cook, covered, on low for 7 to 8 hours, or until thick and creamy.
- To serve, stire the half and half mixture into the oatmeal. Spoon into bowls, sprinkle with the cinnamon.
DO NOT SUBSTITUTE QUICK COOKING OATMEAL – THEY WILL NOT HOLD UP IN THE SLOW COOKER.
