OVERNIGHT OATMEAL

Serves 4, 1 cup per serving

1/3 cup fat-free half and half

1 tablespoon firmly packed brown sugar

1 teaspoon light tub margarine

1 teaspoon vanilla extract

3 ½ cups water

2 cups uncooked rolled oats

2 medium sweet apples, such as fuji or gala cut into ½ inch pieces about 2 cups

1/3 cups raisons – optional

2 teaspoons apple pie spice

¼ teaspoon ground cinnamon optional

  1. In a small bowl, stir together the half and half, brown sugar, margarine and vanilla.
  2. Cover with plastic wrap and refrigerate overnight until serving time.
  3. Lightly spray to a 3 to 4 quart slow cooker with cooking spray.
  4. Put the remaining ingredients except the cinnamon in the slow cooker, stirring well to combine.
  5. Cook, covered, on low for 7 to 8 hours, or until thick and creamy.
  6. To serve, stire the half and half mixture into the oatmeal. Spoon into bowls, sprinkle with the cinnamon.

DO NOT SUBSTITUTE QUICK COOKING OATMEAL – THEY WILL NOT HOLD UP IN THE SLOW COOKER.
