LITTLE EARLINE'S GREEK SALAD

Earline "Missy" Pittendreigh

The Pittendreigh family often went to the Greek Restaurant in Greenwood (it is no longer there). Bill Pittendreigh remembers, "As parents we always felt that it was the Feta Cheese that Missy wanted since she begged for ours."

12 finger pieces of feta cheese

1/2 head of lettuce cut in small pieces

1/4 cup sliced radiches

1/2 cup of celery, cut up

1/4 cup green peppers

1/4 teaspoon salt

1/4 teaspoon paprica

3 teaspoons olive oil

2 tablespoons vinegar

Optional:

1/4 cup olives

1/2 cup mushrooms

several pieces of anchovies
