LASAGNA - Ginny's Lasagna

1/2 16-Ounce package of lasagna noodles

1 8-ounce package of shredded mozzarella cheese (2 cups)

1/4 cup grated Parmesan cheese

1 14-to 15-ounce jar spaghetti or pizza sauce

1 15-ounce container of ricotta cheese

1. Prepare lasagna noodles conventionally as directed on package; drain. In small bowl, combine mozzarella and Parmesan cheeses.

2. Into 12 inch by 8 inch baking dish, spoon about 3 tablespoons spaghetti sauce. Top with 3 lasagna noodles, 1/3 sauce, 1/2 ricotta cheese and 1/3 mozzarella and Parmesan mixture. Repeat. Top with 3 remaining lasagna noodles; spoon remaining sauce over nodles. Reserve remaining cheese mixture.

3. Shield 2 narrow ends of casserole with 2 inch wide strips of smooth foil. On microwave cooking rack, cook, covered, on high for 8 to 10 minutes until hot and bubbling; rotate dish once halfway through cooking. Discard foil. Sprinkle remaining cheese mixture on top; cook 4 to 6 minutes until cheese melts. Let stand 3 minutes. Makes 8 servings.
