Helen Robertson
This recipe was given to Helen Robertson by Bess Bateman.
6 lbs. Peaches
3 lbs. sugar
1 pint cider vinegar
1/8 cup pickling spices
Boil sugar & spices in vinegar about 12 minutes, or until clear. Add enough peaches to fill one jar. (I add enough peaches to be covered by the liquid) Cook until tender, lift out of kettle gently, place in jar, cover with liquid to overflowing, seal while hot.
