FRIED OKRA

Yields 8 to 10 servings

  • 2 pounds fresh okra
  • 2 ½ cups water
  • 2 cups vegetable oil
  • 1 cup all purpose flour
  • 1 cup plain cornmeal
  • Salt and pepper

  1. Wash and cut the okra in 1/2 inch disks, discarding the ends.
  2. Pour the water into a mixing bowl. Place the okra in the water to moisten.
  3. Preheat the vegetable oil in a large skillet on medium heat.
  4. In a large mixing bowl, combine the flour, cornmeal, salt and pepper to taste and mix.
  5. Remove the okra from the water and toss in the flour mixture.
  6. Place each piece of okra separately in the heated oil. Cook until golden brown.
  7. When done, remove and drain on paper towel.
