BREAD - Maynard's Navajo Fry Bread

Maynard Pittendreigh

Maynard and Ginny picked up this recipe while working with Navajo churches in Arizona and Utah one summer. As a variation, make one large piece of bread to cook, about the size of you skillet. Then top with everything you would put in a taco or pizza or on a hamburger -- then you'll have Navajo Taco's or Navajo Pizza. To have a Navajo burger, you need to lay out 3 patties side by side, and have a big appetite.

Sift together:

1 cup flour

1 teaspoon baking powder

1/2 teaspoon salt

Blend in about:

1/2 cup lukewarm water.

Stir with fork or fingers until you have dough which you can handle.

Roll out 1/4 inch thick and cut into 2 inch squares. You may poke a hole in the middle if you wish.

Fry in hot fat (1/2 inch) until puffed, then turn and brown other side.

Drain on paper towel.

Serve hot and dip in honey, jam, fruit yogart, gravy, etc.
